5 lbs potatoes
2 cups flour
2 eggs

Directions:
Directions:

Peel and boil potatoes until well done. Mash thoroughly and add in eggs. Place on a well floured board and knead in the flour. Knead dough well. Roll dough into finger-thin long strands. Then cut into 2 inch pieces. Roll each piece into a shell - shape and press the tops lightly with the tines of a fork. Add about 8 pieces of dough at a time into a pot of salted boiling water. When they rise to the top, remove them and drain well. P:lace on a platter and add a pasta sauce of choice and grated cheese.
