Ingredients: 1 loaf Gluten-free bread, sliced. I like to use Three Bakers brand, or another multigrain bread. Three cheeses of varying firmness. Some of my favorite combinations are: brick, colby, pepperjack; gruyere, cream cheese, and cheddar. Unsalted butter or unrefined coconut oil.

Directions:Slice harder cheeses into approximately 1"x3"x.25" strips. Arrange cheese "Jenga" style, up to three layers. You want to make sure that each layer has one piece of each cheese. If you are working with a spreadable cheese, put that as your middle layer. Heat a tbps of butter or oil in a nonstick pan over medium-low heat. Place assembled sandwich in pan and cover (glass lids are best for viewing) Checking often, toast until golden on one side, and cheese becomes shiny. Add more butter as needed. Flip carefully, cover, and repeat until golden brown. Remove, and cut diagonally to serve. |

Notes: The trick is covering the sandwich to melt the cheese before the bread burns. Better to have lower heat than burnt grilled cheese. I like to serve this by itself, but I find that cold pale ale pairs nicely.
