1 1/2 cups fresh or frozen corn, lightly cooked
1/2 cup green or/and red bell pepper, seeded and diced (optional)
1 scallion, chopped
1 tablespoon fresh cilantro, chopped (optional, parsley can be substituted)
1 1/2 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon cayenne pepper

Directions:
Directions:
In medium bowl, combine all ingredients, stirring to blend.

Serving suggestions: Add on top of grilled salmon, chicken, or pork. Wrap in flour tortilla with strips of meat. Use alone as a side dish or salad.
