2 Tbsp. Olive Oil
4 oz. Smoked Ham, diced
1/4 cup Onion, chopped
3 cloves Garlic, minced
1 1/2 cups Chicken Broth
3 cups, Butternut Squash, peeled, diced
Salt & Pepper to taste
1 cup Mascarpone Cheese (or 8 oz. cream cheese)
1 Tbsp. Fresh Parsley
14 oz. Spaghetti
Parmigiano-Reggiano Cheese

Directions:

Heat oil over medium heat in a large skillet. Stir in ham and onion for about 3 minutes. Add garlic for 1 minute. Pour broth over ham mixture and bring to simmer. add squash, salt and pepper and cook until tender; about 15 minutes. Reduce heat to low and gently add cheese to squash until completely incorporated. Stir in parsley and remove from heat.

In the meantime cook spaghetti until almost done and add 1-2 ladles of pasta water to sauce. Add pasta to the sauce to complete the cooking and serve. Garnish with grated cheese.
