1 cup Quinoa
2 cups Water
1/2 head Radicchio, thinly sliced
1/4 cup Balsamic Vinegar
2 Tbsp. Olive Oil
1/4 cup Dried Cherries or Craisins
1/4 cut Pistachios, chopped
3 Tbsp. Fresh Parsley, chopped
1/4 tsp. Salt
dash of Pepper

Rinse quinoa in fine mesh strainer. In a saucepan over high heat, bring 2 cups of water to a boil. Add quinoa and reduce the heat to low, cover and simmer 15 minutes. Remove from heat, cooling slightly. In a large bowl, fluff with a fork and stir in radicchio, cherries, oil and vinegar, nuts and parsley.
