2 slices wheat bread
1/4c. milk
1 lb. ground chicken
1/2c. dry bread crumbs
1/2c.yellow onion , diced
3Tbls. Parmesan cheese
1 (16oz) pkg penne or ziti pasta, or shape of choice
1 can diced tomatoes with basil and oregano
1/2C. skim mozzarella cheese, grated
Parmesan cheese for garnish

Directions:

Tear wheat bread into pieces and add milk. Let stand for 5 minutes. Add chicken, bread crumbs, onions and Parmesan cheese. Mix well with your hands, Shape in 1 1/2 inch balls. Place in an aluminum foil lined baking dish sprayed with cooking spray. Bake at 350 degrees for about 40 minutes or until done.
Boil pasts while waiting for meatballs to cook. Drain off hot water and add the canned tomatoes. Sprinkle in cheese and stir. Serve meatballs over the pasta and garnish with grated Parmesan.
Serves 4-6
