Lemon Vinaigrette:
Whisk together juice and zest from 1 large lemon
2/3 Cup Olive oil and 1/4tsp salt.

Directions:
Directions:
Toss of the vinaigrette mixture with 1.5 lbs. uncooked and peeled medium to large shrimp.
Grill 5 minutes turning once. Add remaining Vinaigrette mixture and add 3TBSP Pesto (any brand) to shrimp and place on platter with salad greens to serve.
