2 chicken breasts
1/2 cup celery, sliced
1/2 cup sweet onion, diced
1/2 cup carrots, sliced
1 cup cabbage (or kale), cut to bite size
4 medium red potatoes, quartered
4 chicken bouillon cubes
2 cloves garlic, minced
1 tsp cumin powder
1/2 tsp turmeric
1/2 tsp black pepper
2 bay leaves
8 cups water
1/3 cup long grain rice
1/4 cup tomato sauce

Directions:
Directions:
Put chicken, vegetables, bouillon cubes, & water into large stock pot. Cook, covered, on med-high heat until boiling. Reduce heat to low simmer. Mince the garlic & let it sit on cutting board while you gather all your other spices - add rice, spices, garlic, tomato sauce & bay leaves to the soup. Let soup simmer for at least an hour. If your chicken pieces were whole - this is a good time to remove the chicken - cut into bite size pieces & add back to soup pot. Let soup continue to simmer for at least 30 more minutes (total cook time about 1 1/2 - 2 hours). Remove bay leaves & serve soup with lemon slices on the side.

Chicken soup really does have medicinal properties. Even if you just drink the broth - it makes you feel good. And you can substitute, omit, or add any of the vegetables in this recipe. If you want to add fresh corn off the cob - wait until you are going to shut it off & add the corn at the last minute. It cooks very quickly.
