Carrot Cake Recipe

2 c flour
1 c sugar
1 1/2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 eggs
1 c shredded carrots
2/3 c oil
1 jar baby food carrots
2/3 c crushed pineapple
1 T pineapple juice
1 1/2 tsp vanilla

Preheat oven to 350
Grease 2 - 8 inch cake pans. Sift flour, sugar, soda, baking powder and salt. Add cinnamon, carrots, eggs, oil, baby food, pineapple, juice and vanilla. Blend about 3 minutes. Pour in pans and bake 35 minutes or until cake springs back. Cool then frost with cream cheese frosting.
