1 loaf cinnamon raisin bread, torn into small pieces
6 eggs, beaten
3 cups skim milk
2 teaspoons vanilla

Directions:
Directions:
Preheat oven to 350 degrees. Beat eggs, milk, and vanilla in a bowl.

Spray a 3-quart casserole dish with nonstick spray and arrange bread on the bottom. Pour egg mixture over the bread.

Bake at 350 degrees for 50-60 minutes. Sprinkle powdered sugar on top.

Note: casserole can be refrigerated overnight prior to baking. Let casserole come to room temperature while the oven preheats.

Many years ago, a friend’s mom made this easy, delicious breakfast casserole for us after a sleepover. It has become a staple in my kitchen ever since!
