1 tablespoon butter
1 clove garlic, peeled and chopped
1/2 pound sweet or hot Italian sausage, removed from the casings
1 10-ounce package frozen chopped spinach, defrosted
1/2 cup light cream
1 pound rigatoni or penne pasta

Directions:
Directions:
Sauté the garlic in the butter in a large skillet. When lightly browned, add the sausage meat and cook over medium heat, breaking up the sausage with a fork until lightly browned and almost reduced to sausage crumbs.

Add the spinach and mix well. Add the cream and let heat through.

Meanwhile, cook the pasta in boiling, salted water. Drain.

Toss the pasta well with the sauce and serve. Serves 4.
