3 eggs
1 c oil
2 c sugar
2 c grated zucchini
3 tsp vanilla
3 c flour
1 tsp salt
1/4 tsp baking powder
1 tsp baking soda
3/4 tsp nutmeg
3 tsp cinnamon
1 c chopped nuts - optional

Directions:
Directions:
Mix eggs in mixing bowl.
Add oil, sugar, zucchini and vanilla.
Sift dry ingredients together and add to egg mixture. Add chopped nuts if desired.

Bake at 325 for 1 hour in 2 well greased and floured loaf pans.
