1/2 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
3 egg yolks
2 cups scalded milk
1 tablespoon butter
1/2 teaspoon vanilla extract
3 ripe bananas, sliced
1 baked (9-inch) deep-dish pie shell
3/4 cup whipping cream, whipped

Directions:
Directions:
Mix the sugar, cornstarch and salt in a bowl. Add the egg yolks and mix well. Whisk in half the scalded milk. Combine with the remaining scalded milk in a saucepan. Cook until the custard boils and thickens, stirring constantly. Remove from the heat and stir in the butter and vanilla. Chill until cold.
Arrange a layer of banana slices in the baked pie shell. Top with the cold custard. Spread the whipped cream over the custard. Arrange a circle of banana slices around the edge, if desired. Refrigerate any leftovers.

Yield: 8 servings
