2 1/2 cups all-purpose flour
2 cups packed brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup shortening
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
3/4 cup buttermilk

Directions:
Directions:
Mix the flour, brown sugar, cinnamon and salt in a large bowl. Cut in the shortening with a pastry blender or fork until crumbly. Remove 3/4 cup and set aside. Add the baking powder and baking soda to the remaining crumb mixture and stir to mix.
Stir the egg and buttermilk in a small bowl. Add to the crumb mixture and mix well. Pour into a well-greased 9-inch cake pan and top with the reserved crumbs. Bake at 350 degrees fro 20 minutes or until a wooden pick inserted in the center comes out clean. Cut into wedges and serve piping hot.
Yield: 8 servings
