1/4 cup (1/2 stick) butter
1 medium onion, chopped
1 bell pepper, chopped
2 jalapeno chiles, seeded and chopped
2 pounds tomatoes, peeled and chopped
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper

Directions:
Directions:
Melt the butter in a saucepan. Add the onion, bell pepper and jalapeno chiles. Sauté until the vegetables are tender. Stir in the tomatoes, oregano, salt and pepper. Simmer to reduce the liquid. Serve over hot cooked rice and top with shredded mozzarella cheese.

Yield: 2 cups gravy
