Corn Bread and Bacon Stuffing Recipe

1 box corn bread mix, prepared according to package directions
1 cup chopped onions
2 beaten eggs
1 tsp poultry seasoning
1 cup chicken broth
6 slices bread, toasted
6 slices bacon, chopped
1 cup chopped celery with leaves
2 Tbl snipped parsley
1/4 tsp salt
pepper to taste

Heat oven to 350║
Cut corn bread and toasted bread into cubes, set aside
In skillet, sautÚ bacon, onion and celery until the vegetables are tender, but not brown.
In large bowl combine eggs, bacon mixture, parsley and seasonings.
Add bread cubes and toss lightly until well mixed.
Add enough of broth to moisten. Toss gently to mix.
Bake, covered, in an ungreased 1 1/2 QT casserole for about 30 minutes (or stuff turkey and cook in bird.)
