2 1/2 to 3 lbs. beef shanks, cut into serving pieces
2 T flour
1T vegetable oil
1 Lrg. onion, chopped
1 large can whole tomatoes
1 beef bouillon cube
2 bay leaves
1/4 tsp. salt
1/4 pepper
1/4 tsp. garlic powder
3-4 carrots, peeled and cut into 1 inch pieces

Directions:
Directions:
Coat beef shanks with flour, shaking off excess. Heat oil in large skillet or Dutch oven. Add beef and brown over high heat, turning once.Add all remaining ingredients, except carrots. Cover and bring to a boil:reduce heat and simmer, covered, 1 hr. Stir in carrots; cook covered about 1 hour longer or until carrots and beef are tender. Remove bay leaves. Serves 4

Serve over polenta.
