German Potato Salad Recipe

9 medium potatoes
1/2 lb. Bacon, diced
1 Onion, chopped
4 Tbsp. Flour
4 Tbsp. Sugar
1 Tbsp. Salt
1/2 tsp Celery Seed
Dash of Pepper
1 1/2 cup Water
2/3 cup White Vinegar

Directions:
Directions:
Wash potatoes and put in large pot with water. Bring to boil and simmer until just fork tender. Cool thoroughly (I usually refrigerate overnight). When cooled, peel and cut into cubes or slices.

In large skillet, fry bacon until crisp, remove. In bacon drippings, cook onion until tender. In a small bowl mix flour, sugar, salt, celery seed and pepper. Add to onions over a low heat. Slowly add water stirring constantly, then add vinegar. Heat to boiling until thickened. Add Bacon back to mixture.

Slowly pour over potatoes a little at a time until completely coated. Bake at 350 for about 30-45 minutes.
