Salmon loaf Recipe

1 14 3/4 oz, can of salmon, drained and flaked (save liquid)
2 eggs beaten
2 c. soft bread crumbs or 1/3 c. unseasoned dry bread crumbs
2 tbsp. finely chopped parsley.
1/4 tsp. salt
1/8 tsp. pepper
1 small onion chopped
2 tbsp. lemon juice

Preheat oven 350
Generally grease 8 x 4 inch loaf pan, or 8 inch square pan.
In a large bowl combine salmon, reserved liquid then add all the remaining ingredients mix well.
Press into greased pan.
Bake 50 to 60 minutes or until golden brown and knife is clean when inserted into to center of pan. Let stand for 5 minutes. Loosen edges and remove from pan.

Can be made ahead cover and refrigerate up to 24 hours. Then bake as driected above.
