1/4 lb. Bacon, diced
2 lbs. Ground Beef/Turkey
1 large Onion, diced
2 stalks Celery, chopped
1/2 Green Pepper, diced
1 Pablano, diced (optional)
2-3 cloves Garlic, minced
2-3 large cans Tomatoes, diced
1 large can Kidney Beans, drained
1 Tbsp. Salt
1 Tbsp. Sugar
1/2 tsp. Celery Seed
1 Tbsp. Chili Powder
1/2 tsp. Pepper
1/2 tsp. Cilantro
Salsa, Sour Cream, Cheddar Cheese (Garnish)

Directions:
In skillet, fry bacon until crisp and set aside. In bacon drippings brown ground beef and add onion, celery and peppers, cooking until beef is lightly browned and vegetables are soft. Add garlic for another minute.

In stockpot add tomatoes, kidney beans, seasonings, and meat mixture (straining off the liquid/grease. Simmer for about an hour until slightly thick. Serve and garnish as you like.
