2 tbsp. lemon juice
1/2 tsp salt
3 lb broiler-fryer chicken cut into 8 pieces
1/3 c flour
2 eggs beaten
3/4 c fine dry bread crumbs
1 tbsp. barbecue spice

Directions:
Directions:
Sprinkle lemon juice and salt over chicken. Let stand in refrigerator at least 1 hour. Dredge chicken in flour and shake off excess. Dip chicken in egg, then roll in bread crumbs mixed with barbecue spice. Place in greased baking pan. Bake in a preheated moderate oven 350ºF for 1 hour or until done. Serve hot or cold. If desired sprinkle with additional barbecue spice when serving.
