Ingredients: 40 asparagus spears, trimmed (about 2 pounds) Cooking spray 1/4 teaspoon kosher salt 1/8 teaspoon black pepper 2 tablespoons butter 2 teaspoons low-sodium soy sauce 1 teaspoon balsamic vinegar

Directions:1. Preheat oven to 400º. 2. Arrange asparagus in a single layer on baking sheet; coat with cooking spray (or drizzle with olive oil/avocado oil). Sprinkle with salt and pepper. Bake at 400º for 12 minutes or until tender. 3. Melt butter in a small skillet over medium heat; cook for 3 minutes or until lightly browned, shaking pan occasionally. Remove from heat, stir in soy sauce and vinegar. Drizzle over asparagus, tossing well to coat. Serve immediately. Yield: 8 servings |

Notes: This is soooo good. Great for Easter (when asparagus are best) but can work any time of the year. The small amount of butter goes a long way and makes this dish feel very rich even though it's only about 45 calories per serving. (adapted from Cooking Light Magazine)
