2 pounds chicken tenders or 4 large breasts cut into thirds
2 sleeves Ritz crackers crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
3 cups shredded cheddar cheese
1 teaspoon dried parsley
Sauce:
1 can cream of chicken soup
2 tablespoons sour cream
2 tablespoons butter

Directions:
Directions:
Pour milk, cheese and cracker crumbs into 3 separate pans. Mix salt and pepper into crumbs.
Dip each piece of chicken into the milk, then cheese (press cheese into chicken), then cracker crumbs and press them in.
Place chicken into greased 9 x 12 pan and sprinkle with dried parsley.
Cover pan with foil and bake at 400º for 35 minutes.
Remove the foil and bake another 15 minutes or until edges of chicken are golden brown and crispy.
For sauce, in sauce pan, combine soup, sour cream and butter and stir with a whisk until nice and hot. Serve over the chicken.
