1 chicken cut in pieces or 4 chicken breasts
2 sprigs parsley
4 ribs sliced celery with leaves
1 sliced carrot
1 small cut up onion
2 teaspoons salt
2 teaspoons pepper
1 bay leaf
Cut up chicken, add vegetables and cover with water.
Bring to a boil,. Simmer 2 1/2 hours.

Dumplings: (can use Bisquick recipe for dumplings instead)

Sift together 1 cup flour, 2 teaspoons baking powder, 1/2 teaspoon salt.
Combine 2 tablespoons cooking oil and 1/2 cup milk.
Mix together just to moisten and drop by tablespoon directly into boiling stock. Cover tightly. Reduce heat (don't lift cover). Simmer 12-15 minutes. Remove chicken and dumplings, strain broth and bring it to a boil. Mix 1/2 cup flour and 1 cup water and gradually add it to the stock. Cook until thickened. Add salt and pepper to taste and pour over chicken and dumplings.

This is Mom's recipe. Sometimes the broth is thick enough after cooking the dumplings that all you have to do is take out the bay leaf and serve.
