2 large yellow onions
3 carrots, peeled and sliced
2 packages sliced mushrooms
4 cups beef broth
1/4 cup parsley, chopped
1/2 cup medium pearl barley
1/4 teaspoon black pepper

Directions:
Directions:
In a large heavy saucepan over medium-high heat, combine onions, carrots, mushrooms, broth, parsley, barley, and pepper. Bring to a boil, reduce heat and simmer, partly covered, 40 minutes or until barley is tender.
