32 oz chicken stock
1 lb sausage (your choice--I prefer Italian)
1 lb shrimp (cooked or frozen salad shrimp works perfect)
1 small onion (diced)
1 can of diced tomatoes (basil, garlic, & oregano)
20 oz cheese tortellini
8 oz cream cheese (cut into small chunks)
Salt & Pepper as needed

1) In a skillet, cook the sausage and onion; drain and chop sausage into bite size pieces
2) If using fresh shrimp-cook in sauce pan until pink; set aside
If using frozen salad shrimp, rinse over cold water and pat dry--set aside.
3) Cook tortellini according to instructions
4) In large soup pan combine sausage, shrimp, and tortellini and remaining ingredients (chicken stock, tomatoes, and cream cheese) heat on medium until cream cheese is melted. Stir occasionally.
