Ingredients:  
1 tbsp. melted butter
1 tbsp. flour
1 c. milk
2 well-beaten egg yolks
1/2 tsp. salt
1/4 tsp. nutmeg
Dash of pepper
1 can Albacore tuna (7 oz.) drained and flaked
2 stiff-beaten egg whites (beat until peaks form)
Lemon wedges

Directions:
Directions:
On stove make white sauce of of butter, flour and milk. Slowly add beaten egg yolks to white sauce. Add salt, nutmeg, pepper and tuna. Fold in egg whites. Bake in greased individual baking dishes or casserole pan in moderate oven (325º) for 45 minutes. Serve with lemons to squeeze over top of soufflé if desired.
