3 c beets, diced
1/4 c butter, ghee or coconut oil, melted
1 tbsp fresh rosemary, minced
1 tsp coarse salt

Directions:
Directions:
Preheat the oven to 400F. Line a baking sheet with parchment paper. Toss the beets in the melted butter and sprinkle with salt and rosemary. Place the beets on the baking sheet. Roast for 50-55 min, until the outside is crispy and soft on the inside.
