Lemon Honey Sticky Chicken Recipe

3 tbsp butter, ghee or coconut oil
1/2 medium sweet onion, minced
1 garlic clove, minced
1 lb boneless chicken breast, sliced small
1 tsp salt
1 tsp garlic powder

For the sauce:

3/4 c chicken broth
1/4 c plus 1 tbsp honey
1/4 c lemon juice
2 tbsp coconut aminos
1 tsp grated ginger
1 tsp coconut vinegar
1 tsp Sriracha

Melt butter in a large saucepan over medium heat. Add onion and garlic. Cook until the onion is translucent approximately 5 min. Season the chicken with salt and garlic powder, then add to the pan. Brown all sides until cooked thoroughly approximately 12 min. Remove from the pan and set aside on a plate. In a medium bowl, whisk together all the sauce ingredients. Reduce the heat to medium-low and pour in the sauce ingredients. Bring the mixture to a boil. Let the sauce reduce 1/3, about 10-15 min until the sauce coats the back of a spoon. Once the sauce has thickened, return the chicken to the pan and cook for 2 min to warm the chicken through.
