3 large eggs
1/2 c + 3 tbsp almond or full fat coconut milk
2 tbsp honey
1/2 tbsp lemon juice
1 tsp vanilla
1/2 c coconut flour
1/2 c tapioca flour
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 c fresh fruit, blueberries, bananas, etc

Directions:
In a large bowl whisk eggs. Add almond milk, honey, lemon juice and vanilla. Whisk until well blended. In a separate bowl mix together the coconut flour and tapioca flour and then add 1/4 c of the wet ingredients to the dry ingredients at. Time while continuing whisking. Then mix in the baking soda, baking powder and salt. Grease a large pan with coconut oil. Once the pan is hot, ladle in pancake batter. When the batter starts to bubble add fruit to the pancake. The pancake should cook on each side 3-4 min. Repeat with the rest of the batter.
