4 eggs
Zest of 1 lemon
3 tbsp lemon juice
1/4 c ghee, butter or coconut oil
1/4 c honey
1 tsp vanilla
1/8 tsp salt
1/3 c coconut flour
1/2 tsp baking soda
1 tbsp poppyseed

Directions:
Directions:
Preheat oven to 350F. Grease muffin tins. Add all ingredients except poppyseeds in a food processor. Once ingredients are mixed, pulse in poppyseeds. Bake 25-30 min or until golden brown or a toothpick comes out clean. Cool on rack.
