1 large head of cauliflower
4 tsp olive oil
1 tsp salt
1 large onion, diced
4 c of water or chicken stock

Directions:
Directions:
Preheat oven to 350ºF. Place while head of cauliflower in a 9x13 dish. Rub the cauliflower with 2 tsp of olive oil and sprinkle with salt. Add 1/2 cup of water to the dish. Bake for 1.5 hours or the knife cuts they the core remove the cauliflower and cool. Chop and set aside. Heat 2 tsp of olive oil in a large saucepan on medium heat. Add onion and cook until soft and translucent approximately 15 min. Add cauliflower and 4 cup of water or stock. Simmer for 10 min. Purée till smooth.
