1 cup gluten free flour, multipurpose
2 tbsp sugar
1/2 tsp salt
4 large eggs
2 cups heavy cream
4Tbsp butter, melted
1/2 tsp vanilla

Directions:
Directions:
Mix all dry ingredients. Add wet ingredients and blend well, removing all lumps.
The mix will be thin. In a small skillet (go bigger later after you master small) melt a small amount of butter or use spray pan to lightly coat. Heat the pan, low to medium heat, and add 2 paddle fulls of batter. Tilt the pan to cover the pan evenly. Watch for bubbles and the top looking somewhat dry, about a minute nd a half. Use a spatula to check for golden brown finish, then carefully flip the crepe. Let cook for about another minute, there should be golden patches.

You can fill these with just about anything. If you are looking for a more savory crepe, cut back on sugar and add a little salt.
