1 lb ground beef
6 tbsp butter, ghee or cooking oil
1 medium onion, chopped
8 oz mushrooms, sliced
2 cloves of garlic, minced
1/4 c water
1 c beef stock
1 c coconut milk
1 tbsp fresh parsley, finely chopped
Salt and pepper to tasted

Directions:
Heat a large pan over medium high. Add 2 tbsp of cooking oil. Add the beef and cook till golden brown. Set aside. Repeat above step and add mushrooms. Cook until a golden color. Once cooked, remove from pan and set aside. Repeat first step again, add onions and garlic. Cook until onions are tender. Once onions are cooked, leave in the pan and add water. Cook for a few minutes so the water burns off the brown bits on the bottom of the pan. Add coconut milk, and beef broth. Continue to stir until a creamy sauce takes shape. Return the beef and mushrooms to the pan. Allow to simmer slightly for 5-7 min. May need to turn temperature down to prevent the sauce from boiling. I like to put it in the crockpot and continue to simmer during the day.
