Scimeca's Chicken Marsala Recipe

Ingredients: 2 (6-8 oz.) chicken breasts 1/2 c. all purpose flour 4 Tbsp. butter 1 c. chicken stock 1 thinly sliced green pepper 1 Tbsp. season salt 1 Tbsp. Olive Oil 3 c. sliced mushrooms 1 thinly sliced onion 3/4 c. Marsala wine

Directions:In a shallow bowl, combine the flour and season salt,. Dredge the chicken breast halves in the flour mixture, shaking off the excess.
Heat the oil in a large skillet over med/high heat. Add 1 Tbsp. butter and cook the chicken until golden brown on both sides, then set aside.
Add 1 Tbsp. of the remaining butter and mushrooms. Cook until mushrooms are brown around the edges. Add the Marsala wine and bring to a boil. When the wine has reduced by 1/2, add chicken stock & cook for about 3 minutes.
Lower the heat to medium, return the chicken breasts, and add the onions and peppers. Continue to cook until they are cooked through (about 6 minutes). Swirl in remain butter, add salt and pepper, to taste. Place chicken over pasta, and spoon sauce over the top. |
