2 pounds Yukon gold potatoes, scrubbed
1/4 cup butter
1 cup sweet onion, diced small
1 tablespoon all-purpose flour
Sea salt to taste
Fresh ground black pepper, to taste
Smoked Spanish-style paprika, to taste
2 cups 2% milk
8 ounces shredded 2% sharp cheddar cheese (set aside 1/3 cup)

Preheat oven to 375 F.

Using a mandolin, slice unpeeled potatoes 1/8-inch thick. Place potato slices in a large casserole dish.

Melt butter in a large saucepan over medium heat. Add onions and sauté for a few minutes until they are translucent. Add flour, salt, pepper and paprika and mix well.

Stir in the milk. Add the cheese, reserving 1/3 cup. Bring to a boil, stirring constantly. Remove from heat.

Pour cheese sauce on top of potatoes and bake uncovered for an hour.

Remove casserole from oven, sprinkle with the remaining cheese and bake for another 5 minutes, until the cheese has melted and started to turn brown. Let sit for 5 minutes before serving.
