1 pound fresh brussel sprouts
2 tablespoons extra virgin olive oil
Kosher salt, to taste
Fresh ground pepper, to taste
4 tablespoons diced pancetta
Balsamic vinegar, to taste

Directions:
Directions:
Preheat oven to 400 F. Rinse off the brussel sprouts and pat dry with a paper towel. Cut off the ends and then slice each sprout in half, lengthwise.

In a medium bowl, whisk together olive oil, salt and pepper.

Place the brussel sprouts in a large plastic bag, add the olive oil and shake until well coated.

Transfer the brussel sprouts to a nonstick baking sheet and sprinkle them with the pancetta.

Roast for 15 minutes or so, until they are caramelized.

Place in a serving dish, drizzle the balsamic vinegar on top and gently toss.
Serve immediately.
