4 Tbsp. Butter
1 large Onion, finely dices
1/4 cup Flour
1 qt. Chicken Broth
6 cups Broccoli, chopped
1 1/2 qts. Milk
2 cups Cheddar Cheese, shredded
2 cups Croutons

Directions:
Directions:
In large saucepan, melt butter over medium heat, add onion and cook, stirring occasionally until softened, about 4 minutes. Add flour and cook, stirring to make a paste, for 2 minutes. Gradually whisk in broth and then bring to a boil. Add broccoli and cook, stirring often until tender, about 3-5 minutes. Remove from heat. Puree in a blender in batches and return to saucepan over medium heat. Gradually whisk in milk and cheese. Ladle into bowls and top with croutons and extra grated cheese.
