1 cup (2 sticks) unsalted butter, melted
1 pound (box) brown sugar
1 cup granulated sugar
4 egg yolks
1 1/2 teaspoons vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup chopped nuts
4 egg whites
Confectioner's sugar

Preheat oven to 350 degrees. Line a 9 x 13" pan with parchment paper, or grease the pan with butter and dust with flour. Melt the two sticks of butter and remove from heat. Stir in both sugars and mix until well combined. Stir in egg yolks and beat well. Sift together flour, baking powder, and salt. Stir into creamed mixture. Fold in nuts and vanilla.

In a separate bowl, whisk egg whites until firm. Fold 1/3 of egg whites into above mixture. Add another 1/3 and then remaining amount. Spread batter in prepared pan. Batter will still be very thick.

Bake at 350 degrees for 30 to 45 minutes or until center is firm. Let cool. Remove from pan and cut into squares. Sprinkle liberally with confectioner's sugar as desired.

My grandmother Betty started making these in Texas in 1969, using a recipe from an Imperial Sugar holiday cookbook. The recipe was passed to my mom, who still has it on a handwritten notecard. I always looked forward to Thanksgiving and eating as many of these as I could!
