8 oz. package of cream cheese, room temperature
1/4 c. of sour cream
1 tbsp. plus 1/4 c. of sugar, divided
1 tsp. vanilla extract
1/2 tsp. fresh lemon zest
6 soft flour tortillas
1 3/4 c. sliced strawberries
1 tbsp. cinnamon
vegetable oil, for frying

Directions:
Directions:
Beat cream cheese with the sour cream, 1 tbsp sugar, vanilla extract and lemon zest.
Add 3/4 cup strawberries.
Divide mixture between tortillas, slathering each portion in the lower third of each tortilla.
Next, fold the two sides of each tortilla toward the center and then roll the tortilla up like a burrito and secure it with a toothpick.
Combine the remaining 1/4 c. of sugar with the cinnamon in a bowl.
Add 3 in. of oil to frying pan and heat to 360 º.
Fry the chimichangas until golden brown and crispy, about 3 minutes, flipping as needed.
Place on paper towel to drain and then roll in the cinnamon sugar.
Top with remaining strawberries and cool whip if desired.
