2 lbs ground beef, or bison
2 tbsp butter, ghee
1 yellow onion, diced
3 garlic cloves, minced
1 small butternut squash, peeled and cut into small cubes
4 celery sticks
2 tbsp cumin
2-3 tbsp chili powder
2-3 tbsp Italian seasonings
2-3 tsp red chili flakes (optional for mom)
1 bay leaf
2 c chicken broth
18 oz diced tomatoes
Salt to taste

Directions:
Directions:
In a large saucepan, melt butter or cooking fat alternative. Add onions and sauté over medium high heat until translucent. Add beef and cook till brown. Mix in garlic, butternut squash and celery. Add all the spices to pan except for the bay leaf and mix. Add chicken broth, tomatoes and bay leaf. Simmer for 25-30 min or until the butternut squash are tender.
