4 eggs
1/3 c vegetable oil
2 1/4 c sugar
2 1/4 c flour
2 t baking soda
2 t baking powder
1/2 salt
2 t cinnamon
1/2 t ground cloves
1/2 t ground nutmeg
3 1/4 c finely chopped carrots
1/2 chopped walnuts
1 c crushed pineapple

USE WHITE CHOCOLATE CREAM CHEESE ICING (SEE RECIPE)

Preheat oven 350º. Mix eggs and oil in large bowl. Beat 2 minutes on medium. Add 1 cup sugar and continue mixing 2 minutes. Add remaining sugar and mix 3-4 minutes. Combine flour, baking soda and powder, salt, cinnamon, cloves and nutmeg. Add to egg mixture, beating on low speed approximately 1 minute. Add carrots, walnuts and pineapple. Mix well. Bake approximately 1 hour. Put cake in refrigerator over night.
