4 cups pinto beans (2 lbs.)
1 Tbs. baking soda
2 chopped onions
2 garlic cloves, chopped
1-2 chopped fresh jalapenos
1 bunch chopped cilantro
4 slices bacon
1 -2 Tbs. salt
1/2 tsp. sugar
3 Tbs. chili powder (I put more like 4-5!)
1 - 2 Tbs. cumin
2 tsp. oregano
1 can beer

Directions:
Cover beans with water and soak overnight. Drain and discard any bad beans.
In a large pot about four times as deep as beans, cover the beans with an inch of water and bring to a boil. Boil about 15 minutes; reduce heat and slowly add baking soda.
Stir until mixture foams to the top of the pot, about 1 minute. (I have never had to wait more than 2 seconds!)
Quickly drain and rinse in a colander. Return to pot and add onion, garlic, jalapenos, cilantro and bacon and enough water to cover by about two inches. Cover pot and cook slowly for 2 to 4 hours.
Add salt and other spices during the last hour of cooking time, along with your favorite beer.

These beans are really much better the second day and I try to make them a day ahead of time!
