Bacon and Cheddar Chicken and Dumplings Recipe

4 slices bacon
3 medium potatoes, I like sweet potatoes or a mix
1 onion, diced
2 garlic cloves, diced
4 cups cooked chicken
2 tsp poultry seasoning
3 cups chicken broth
2 cups milk
1 cup half and half
1 Tbsp corn starch
2 cups corn kernels
Salt and pepper
2 cups self-rising flour
2 tsp sugar
2 eggs, beaten
1/2 cup buttermilk
1/4 cup butter, melted
1/3 cup shredded sharp cheddar

Cook bacon in large dutch oven and then remove and crumble once browned.

In the bacon grease, cook, cubed potatoes and onions for about 10 - 15 min. over medium heat until starting to soften. Add garlic, chicken, corn and poultry seasoning and cook for another 3-5 minutes. Use 2 Tbsp broth to make slurry with corn starch.

Add broth, cornstarch, milk and 1/2 and 1/2 and cook over medium high until starting to thicken.

Preheat oven to 375

Mix all dumpling ingredients. Batter will be very moist. Place about 1/4 cup drops over stew and simmer covered for 20 min.

Place uncovered in oven for another 20 - 30 minutes, or until dumplings are lightly browned.
