Ingredients:  
1/4 c. chopped red onion
1 garlic clove, minced
1 tbsp red wine vinegar
Pinch kosher salt
Pinch fresh ground black pepper
2 roma (plum) tomatoes, seeded and chopped
1 tbsp chopped fresh parsley
1/2 tbsp dried oregano
1 tbsp olive oil
1 avocado, chopped
Juice of 1/2 lemon
4 oz feta cheese, crumbled

Directions:
Directions:
Combine onion, garlic, vinegar, salt and pepper in a medium bowl. Let rest while you prepare remaining ingredients. Add tomatoes, herbs and olive oil and stir gently to combine. Fold in avocado, lemon juice and feta. Adjust seasoning as needed. Cover surface of salsa with plastic wrap and refrigerate 2 hours or up to a day before serving.
