Ingredients: 1/2 c sugar 1/4 c light corn syrup 2 T water 2 egg whites 1/8 t cream of tartar 1/2 t vanilla

Directions: |
Directions:Combine sugar, corn syrup and water in a small saucepan and cover with a lid. Heat to boiling. Uncover. Boil gently without stirring and mixture reaches 242º on a candy thermometer or until a small amount of the hot syrup falls, threadlike from spoon. While syrup cooks, beat egg whites with cream of tartar in a large bowl with electric mixer until stiff peaks have formed when beaters are removed. Pour hot syrup into egg whites into very thin stream, beating all the time at high speed until frosting is stiff and glossy. Beat in the vanilla. |

Notes: My mom made this all of the time for our cakes. I remember that I love the cake with this icing because it had a crackle like taste sometimes when it was too hot or something. Other times, it was the soft fluffy way. We didn't have a thermometer and I think that she didn't know about the how the syrup should be. I just know that I love it and loved to lick the spoon. One of my cooking memories.
