4 lbs. chicken breasts
2 tbsp. flour
3 tbsp. curry powder
1/2 tsp. pepper
1/2 tsp. salt
1 tbsp. oil
2 Sweet peppers
3 onions
2 tbsp. freshly grated ginger
3 crushed garlic cloves
1 tbsp. ground cumin
2 tsp. coriander
1 tsp. cinnamon
1 cup chicken broth
14 oz. can coconut milk
Peel 2 limes, finely grated
1/4 tsp. chili flakes
pinch of cayenne pepper

Dredge chicken pieces in flour, 1-1/2 tbsp. curry powder, salt and pepper. Brown chicken in oil. Save leftover flour mixture. Cut peppers and onions in 1/2 " pieces. Remove chicken pieces from pan and stir in peppers, onions, ginger and garlic and sprinkle remaining flour, curry powder, cumin, coriander and cinnamon. Cook about 5 minutes stirring often. Whisk in broth, coconut milk, lime peep, chili flakes, cayenne, remaining pepper and salt. Add chicken pieces. Bring to boil. Reduce heat and simmer 45 minutes. Serve with rice.
