2 or 3 ripe bananas
1 cup sugar
1 egg
Shake of salt
2 tbsp butter
1 tsp vanilla
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda

Directions:
Directions:
Peel and mash bananas. Add sugar, egg, vanilla, salt and butter. Mix well. Combine flour, baking powder and soda. Sift together then add slowly to banana mixture. Mixing only till combined. Put in greased loaf pan or muffin tins and bake at 350º for about 30 to 40 minutes or until a toothpick comes out clean
Remove from pan as soon as can be handled and cool till just slightly warm to touch. Wrap in Saran Wrap til needed.

Other variations:1. Add 1 cup chocolate chips 2. Add 1/2 cup dates and 1/2 cup walnuts
