1 1/2 tbsp olive oil
1 onion chopped
4 garlic cloves minced
1/2 cup good red wine
1 can diced tomatoes
1 tbsp chopped parsley
1 1/2 tsp salt
1/2 tsp pepper

Directions:
Directions:
Sauté onion in olive oil til soft and slightly brown. Add garlic and cook for 2 minutes more. Add wine. Cook til liquid almost evaporates. Add tomatoes, parsley, salt and pepper. Mix together. Bring to a boil then simmer for 1/2 hour on low


This recipe can be doubled and frozen

This is my go to pasta sauce. Add 1 lb cooked and drained hamburg, sautéed mushrooms, celery and red pepper for a spaghetti sauce or add saluted seafood or chicken.
To also make a more intense tomato sauce omit the canned tomatoes but add roasted tomatoes( 12 Roma tomatoes, quartered and tossed with olive oil, salt and pepper. Place on cookie sheet and bake at 375 till golden)
