1/2 c brown sugar, packed
1/4 c flour
1/2 c hard margarine or butter, softened
1/4 tsp cinnamon

Muffin:
1 1/2 c flour
1/2 c sugar
1 tbsp baking powder
1/4 tsp salt
1 egg, large
2/3 c milk
1/4 c vegetable oil
3/4 c cooking apple, grated with without peel, packed (McIntosh apples work well)

Topping:
Combine brown sugar, flour, margarine/butter and cinnamon in a small bowl, mix until mixture is crumbly. Set aside.

Muffin:
In a large bowl, stir flour, sugar, baking powder and salt together, Make a well in the center, In a small bowl, beat egg, milk and oil together. Stir in apples. Pour into the well in the flour mixture. Stir just to moisten.

Fill greased muffins tin cups 3/4 full, sprinkle with topping.

Bake in a preheated 400 oven for 15 to 20 minutes until wooden pick inserted in several muffins come clean. Cool in pan for 5 minutes. Remove pan to rack to cool.
